Can anyone explain some basics? What time the server "resets" etc

For me, the dailies reset at 10:00 EST time, but many other "events" like strongbox lotteries keep going past that time

What is the official day reset time for the EU? What time do the strongboxes lotteries end daily?

Hey!

The official day reset time for EU is 4 am CET (For daily quests as example). The reset time for Strongboxes (For the Prize-Winning rewards and also for new Events and ending Events) is 12 pm CET.
